Ingredients

  • 2kg pork belly, skin removed
  • 4 tbsp BBQ rub
  • 100g butter, cubed
  • 100g brown sugar
  • 200ml honey
  • 200ml BBQ sauce

Method

1

Cut pork belly into 4cm cubes. Season generously with BBQ rub.

2

Set smoker to 120°C with apple or hickory wood.

3

Spread cubes on smoker in single layer. Smoke for 2.5 hours.

4

Transfer cubes to a foil pan. Add butter, brown sugar, and half the honey.

5

Cover with foil and return to smoker for 1.5 hours.

6

Remove foil, add BBQ sauce and remaining honey. Toss to coat.

7

Return to smoker uncovered for 30-45 minutes until sauce is sticky and caramelised.

8

Serve immediately with cocktail sticks.

Pro Tips

  • 💡Get pork belly from a butcher - supermarket cuts are often too thin
  • 💡The cubes shrink significantly - start with bigger pieces than you think
  • 💡Stir occasionally in the final phase to ensure even coating
  • 💡Leftovers (if any) are incredible in mac and cheese or on pizza
